They have combined their original oil with a Dijon mustard to create a piquant vinaigrette. Ideal for salads with hot and cold vegetables. Think beetroot, celeriac or mango & apple as well as leafy salads.
The home of Black & Gold is in the fertile county of East Lothian, where they have been growing oil seed rape on their farm, Stevenson Mains, for over 25 years. Black & Gold is one of the finest finishing oils produced in Scotland and they are proud of their single-farm provenance. It is used by the most famous chefs in the country.
Their oil is very golden, and has a light hazelnut flavour and smells like fresh garden peas. It is delicious as a dressing, for dousing vegetables, or spreading on toast. It is very suitable for all types of baking, roasting and frying.
Many oils are extracted by a heat process, which may include chemicals to assist the extraction process, and the oil is then deodorised. This process eliminates most of the health-giving properties of the oil in its original state. In the cold press method the seeds are simply crushed. No chemicals or heat are used thereby preserving the terroir, the natural colour and the awesome original taste. Critically, the valuable nutrients and fatty acids are preserved. Black & Gold is a magnificent unhomogenised oil.
